Sawaya Matsumoto, Morihate Gohyakumangoku
It has a gentle ginjo aroma.
It is not flashy, but it has a nice smell.
The flavor is strongly acidic and crisp.
The flavor comes in with a bang at first and then quickly fades away.
It is dry, but also very drinkable. It is dry but drinkable, and at the same time refreshing.
Matsumoto Guarding and Breaking. It is cosy. The aroma is mild, but the microbubbles are strong. The sweetness is moderate, but the deliciousness of the rice is fragrant. It is delicious!
Fushimi in Kyoto, the location of Matsumoto Sake Brewery, is one of the three major sake brewing regions in Japan.
Fushimi was once written as "Fushimizu," and the area is blessed with high-quality underground water.
The Matsumoto Sake Brewery, located on the banks of the Higashitakase River, is a beautifully landscaped sake brewery that has been used for filming period dramas, and is registered as a Tangible Cultural Property.

Next up is Sawaya Matsumoto✨
I've had this a long time ago, it's been a really long time, before the sake started 😶.
I tried it and yes... it has this calmness to it that accompanies the meal without disturbing it 😊.
It's still delicious 😆.
Calm wood, vanilla, whey, soap, muscat, and berry aromas.
Fine, slightly effervescent, smooth mouthfeel.
Gentle and clear minerality. Good flavor and sharp acidity. Delicate and refined.
Serve with grated baby sardines, cucumbers picked in the morning, and grilled young corn.
The aroma immediately after opening the bottle is like that of a white wine. It is slightly carbonated and fruity with a hint of acidity, but it can be drunk as much as you like as a food sake. It is recommended to buy it in one bottle as it is cost-effective.
I like this sake. It is well blended and the flavours are well merged together. When pour into the glass, it does give you a sense of fruity and ingredient smell. Obviously the slight lactic acid, rice and umami feel is more important in this sake. It also gives you a round texture with slight hint of nutty feel. I also like the ending of this sake - without significant alcoholic feel which is very pleasant.
