It has a beautiful sake quality with gasiness and acidity at its core. It also has a nice crispness to it with a hint of umami. It is quite tasty.
I thought Aizan was characterized by sweetness and bitterness, but it was a sake that made me reaffirm the depth of sake by showing me that different makers can produce different flavors.

The lovely charm of Aiyama rice is softly wrapped up in the sweetness. The aftertaste is a combination of tangy spiciness, refreshing acidity, and a hint of gas that disappears smoothly and refreshingly. It has a pleasant sharpness. Clear and dry.
You can feel the elegant sweetness of Aizan.
I enjoyed this sake very much last year. This year, I went to buy it as soon as it came out!
How is it possible to set a price that doesn't make you feel expensive, but rather inexpensive, in this era of huge price hikes? So I bought two bottles.
It's delicious...! And delicious! I drank a Jungin of Amami last year, which had a very similar taste.
Nowadays, many breweries are making efforts, and it seems that clearer and cleaner products are becoming more and more common. Even so, I was surprised at the clarity of this sake from the moment I took the first sip.
From the standing aroma, refreshing nuances like citrus peel can be detected in a very gentle way. And yet it is calm. Perhaps it is because it has a somewhat grassy feel to it.
The well-balanced sweetness and acidity are very elegant. There is a slightly fine line bitterness that gives it some fruitiness. It reminds me of Japanese food with just a little bit of Japanese citrus peel or juice added.
So I tried it with takikomi gohan. Oh no, it goes together so well. I'm glad I'm Japanese...I'm impressed again this year! Looking forward to another bottle...

There was a loud "shpop" sound when the bottle was uncorked.
It is not too sweet, while still giving off the Aizan-like flavor.
The aftertaste is refreshingly clean with a bit of spiciness and acidity!
