I was given a malt liquor that I had never had before. It had a nice sourness, and the carbonation gave it a nice thirst-quenching sensation, making it surprisingly easy to drink.
According to the official website, it is unfiltered.
It's been a long time since I had Biwa no Sasanami. The green bottle I drank before was fresher and more fruity. This one is not so sweet, but it's surprisingly light and refreshing. Maybe because it's been a long time since it was made, it has a bit of an aged feeling.
Just like the image that comes to mind when you hear the words "Junmai Nama Genshu", it has a freshness, a delicious taste, and a refreshing mouthfeel.
It's not easy to drink unpasteurized sake, but it has a high alcohol content.
The shop's pop-up said it was post-Jyuushiro, and I bought it thinking, "Really?" But it's good!
It has an authentic taste and sweetness. It's hard to find a sake with such a good price.
It's a real treasure!
This is the third one-cup bottle for dinner.
Asahara Shuzo Biwa no Sasanami Junmai Genshu, served cold.
It has a light mouthfeel and a good acidity.
It's a taste you can keep drinking.
Cup sake is once again delicious!
We bought it at Ajinomachidaya in Nakano.
Saitama 150th Anniversary Sake - Biwa no Sasanami Junmai Daiginjo
Soft acidity, sweetness and gorgeousness. A clean aftertaste and alcohol with a lingering bitterness.
Buy at Echio Winery. It's a pure, unpasteurized sake. It was left at room temperature for 24 hours due to unavoidable circumstances. The moment you drink it, you can taste the fruity sweetness that is typical of namaishu, but the rice flavor that is typical of junmai slowly permeates the taste buds. Koshiu is a nice town with two sake breweries!
Strong alcohol smell. Dark yellow color. The sake and alcohol content are both high, but it is not harsh. On the contrary, the sweetness and deliciousness stand out. It is a taste that I have never tasted before.
I wanted to fill Saitama.
It's the only Kanto sake I can get within my area of action.
I'm not sure what the aroma is, but it has a fruity scent.
When you put it in your mouth, it has a muscat-like aroma, sweetness, and umami.
It also has its own peculiarity, though it is not unpleasant.
There is also a touch of alcohol.
The sweetness is a little strong and lingers until the end.
It is easy to drink for a raw sake.
The sake I compared it to was Kido's Junmai Daiginjo, so compared to that it is a bit rough.
But it is tasty enough.
It is a solid sake with sweetness and umami.
You can enjoy it even with strong snacks.
Saitama's sake is also delicious.

Biwa no Sasanami Junmai Nama Genshu
70%, 18%, 720ml, 1300 yen
We went from Tokyo to a brewery in Saitama to buy some sake.
Probably Asahara Brewery is one of the most maniacal breweries in Saitama. You have to check this kind of place.
The label is also selected to be old. At worst, it looks old-fashioned, but since it's a nama-shu, what do you think?
The first sip.
Huh?
My bet was right. The fruit is unexpectedly juicy.
It's delicious.
The freshness of the sake makes a big impact on the palate. The aftertaste is quite refreshing. The bitterness is like a dry beer, and the slightly strong astringency is good. The strength of the original sake is good. The fact that it is not polished does not make it unpleasant, but rather it is delicious.
However, if I had to pick a negative point, it would be that the flavors are competing with each other and it is a bit too jumbled. It needs a little more cohesion.
I gave it to one of the members of the Shinagawa Nakanobu Drinking Contest (Kinmatsu-kai) without telling him the brand name, and he said the same thing.
I'm going to try a different spec again because it's a favorite of mine.
By the way, there is a drink called "Lemon Sour Moto" from this brewery, and it's really good.
