I stopped by for the first time on my way home from a nearby gym. I had been curious about this sake place shu for a while, and when I ordered a small drink set, I brought three bottles from the refrigerator and poured them by myself. I had already bought Teisho once in Ogawa-machi, but the beautiful bottle attracted me and I picked it up. It is sweet and mellow with a slightly carbonated acidity. The aftertaste is dry and tight. It is delicious.

According to our preliminary research, the brewing water has a hardness of 149mg/ℓ, which is harder than Nada's miyamizu (miya water), which has a hardness of 120 degrees, and is said to be one of the hardest water in the world.
According to the brewer's explanation, it is hard water with all calcium content.

This is another sake that was not on the list. I don't know this one at all 😳 Sake was clear and fruity. I think it was fruity.
They brought several sakes that were not on the list, so I got the impression that there were a lot of sakes.
There was also a keg draft that I was curious about but it was an extra charge so I didn't try it.
My first impression was a harsh alcohol smell that rides on the tongue like a pungent odor, not unlike that of a Junmai Daiginjo. Too bad. Saitama is a hidden sake brewery, but I have not been able to find a sake that suits my taste.
The aroma is softly ginjo, but it is strange that I cannot pick up any fruity aroma on the palate. It may be the Daiginjo-esque lactic acidity that is typical of Junmai, with hints of white bean dumplings and apricot jelly.
