Toranomaki Junmai Daiginjo Unfiltered Genshu
This is a new sake brewed this year using limestone water pumped up from 130 meters below the ground.
It is brewed with 50% polished "Sainokagayaki" rice from Saitama Prefecture.
This Junmai Daiginjo has a moderately fruity, wavelike aroma, and a delicious yet sharp taste.

Well, a while ago, I went to a year-end party of a bank I do business with.
As usual, I have a pattern of having Kibune-san send me directly the brand he chooses for me, and I take it as it is. (Laughs)
The first one was Teisho's Toranomaki Kuro Junmai Daiginjo Unfiltered Harajuku.
It has a sake strength of +14!
It is in the super dry category, so what in the world does it taste like?

It goes down the throat nicely and goes perfectly with the ingredients! 👍
As we passed it around the table, the person who is usually a whiskey drinker said, "This is delicious! and the person next to him and I emptied the remaining quarter clean. 😱

Caution when opening: ⚠️ contains carbon dioxide gas.
Not too sweet, strong attack, fresh nigori sake. It seems to go well with Chinese and fried foods.
It is also recommended to be heated, so I would like to try it when the bubbles settle down. ⇨Changes to fuller when warmed.

The Saitama label has a great impact 😅The taste is wild and dry. It can accept fried squid, but it's a bit strong in alcohol. I think it would be better if it was heated up 🤔I could choose to drink standing up or sit down for a bit and the place was clean 😆.

The acidity comes first in the mouth, then the umami. It is called "dry" and is stronger than its alcohol content (16%). The aftertaste is not so much umami, but rather a spicy taste.

Local sake from Ogawamachi, Saitama 🍶 with a sweet rice aroma...sweet and bitter on the palate with a nice bitter aftertaste...some breweries have traditional sake that goes well with strong flavors like hormone or pork marinated in miso...but this sake 🍶 is very modern 😋 delicious! ...mellow and delicious taste...enjoy the flavor of the rice...I want to drink this again...
