It seems to be a premium one from Teisho in Saitama, Japan. Crystal color with yellow tints visible. It has a very strong aroma of ginjo aromas such as apple, banana, melon, and pineapple. Also, joshin powder and lime. The attack is strong, mildly sweet and tart. A refreshing acidity spreads along with the pineapple flavor, and when it begins to subside, a pleasant bitterness spreads to the side, giving it a full body. It is strong and robust at 18% alcohol, but I am afraid that the gorgeousness of the aroma might mask it. I like it a lot.

First post after moving I became a resident of Saitama Prefecture this month! I'm looking forward to working with you all in Saitama and the Kanto area! So, I'm going to resume my sake drinking activities starting with Saitama's sake! Teisho Junmai Genmai Sake THE SAITAMA I bought this sake because of the unique label design with Saitama's pose and Saitama's color, red 🟥. I'm going to open the bottle after I make a Saitama pose too. ✌️ The Saitama sake brewed with water and rice from Saitama prefecture. First of all, the aroma gives a deep sweetness derived from grains. On the palate, it is more umami and acidic. And although it is understated, it is accompanied by a rich sweetness like brown sugar! It is quite easy to drink despite its high alcohol content of 18%. Be careful not to drink too much 😅

This is a new Junmai Ginjo-Unfiltered Nama-shu, a series of sake produced in small quantities and limited to special dealers. A pasteurizer is used to pasteurize and cool the sake after bottling, maintaining the freshness of the raw sake even though it is pasteurized. It is a bottle that fully demonstrates the charm of Teisho, which is "spicy yet delicious, fragrant yet calm. The rice used is Sai-no-Kizuna, a local rice from Saitama Prefecture, polished to 60%, and fermented slowly in a low-temperature zone to achieve a dry, yet flavorful taste.
