It is a rare sake that can produce this taste.
It is said to be brewed jointly by Tanizumi and Kagatobi in Noto, which was damaged by the earthquake. I had it at my favorite izakaya (Japanese-style bar) in Dotonbori, as they were supporting Noto's recovery. It had a refreshing, light taste.
I like it so much I think I'm on my 6th bottle...

Tsuruno Sake Brewery, a Noto sake brewery with over 230 years of history, was damaged by last year's earthquake and tsunami, making it difficult for them to continue brewing sake.
We were served a junmai sake released with a retro label that goes back to its roots.
The exotic aroma of banana and pineapple on the nose leads you to the palate, where you are greeted with a robust and full flavor that is quite different from the impression the aroma gives. The finish is clean and crisp with a refreshing acidity.
Based on Tanisen's original recipe, Yoshida Sake Brewery's refined techniques have been incorporated to create a modernized dry sake that goes beyond the traditional dry sake!
Purchased at the Noto Sake Brewery Reconstruction Support Event held at the Expo Commemorative Park Station of the Han Monorail, which I happened to visit.

Don't stop Noto's sake! The fourth Noto support sake. This is a collaboration between Tsuruno Shuzoten of Tanisen and Tenryohai Shuzo of Garakudai. Tsuruno's Ishikawa was also known for its beautiful and dry image, but the collaboration between the two breweries was even more amazing. The gentle ginjo aroma was followed by a crisp, clean, and light taste. It is truly a light and dry sake from Echigo Sado. It is hard to believe that it is 13.5 degrees Celsius. This is delicious!
