This is my first New Year's Day back in my hometown Osaka. This year, my parents invited us to their department store Osechi. My sister and her husband brought me a bottle of Okutanba as a celebratory sake. You can feel the sweetness of the rice in the beginning, but it changes to a dry taste in the middle to the end. It is a perfect match for the richly flavored Osechi and fatty yellowtail sashimi. It is said that the sake degree is +5 (dry), but I feel that it is +2~3 (slightly dry?). I guess. Anyway, it was a delicious sake. Thanks to my sister and her husband!

The sake my sister and her husband served me at New Year's was so good that I decided to pick up another brand from the same brewery. Okutanba Junmai Ginjo. This is Yamana Shuzo's regular sake. As stated on the label, the brewery has a long history, having been founded in Kyoho. The Edo period (^_^;) is amazing. It was my wife's fourth birthday today. I really wanted to go out to eat, but the situation was such that we had a takeout party at a yakitori restaurant and drank at home. Thank you for your continued support. I had a cold glass of sake. Oh, dry? It's been a while since I've had a dry, crisp sake. Even though it's light and refreshing, you can still feel the taste of the rice right after you put it in your mouth. At the same time, there is a sense of alcohol, but the aftertaste is short, so it gives a refreshing impression. According to the brewery's website, it has a sake strength of +1. ＋Hmm? +1? It's not dry, is it? Once again, I realized that the accuracy of my tongue sensor is disappointing (tears). Well, everyone has their own way of feeling.

I had this as a local sake when I visited a place called Sasayama in Gifu. It was not dry, but was very smooth and easy to drink.

It has been a long time since I used a measuring device, and I was impressed that my body still remembered to do so 🥺. Well, I'm going to have a hot pot and hiyaoroshi on the weekend after a hard day's work. It is quite dry when drunk before a meal, but the rice has a strong umami flavor because of the high milling ratio. It's not like Gohyakumangoku......right? I don't know 😅. When you drink it during a meal, the sweetness increases. Delicious 😋. The label is cute💕

Second drink for the day, this time is with unagi feast as dinner. Its fruity and slightly sweet notes paired so well with the umami taste of the dishes served. It was an absolute wonderful night in Taiwan. Amazing!!

Purchased at a sake shop A guy I used to know at a sake bar recommended this sake from Hyogo! A brand that you don't see very often in Osaka 👀. Cold sake. Subdued aroma Light on the palate Rounded flavor with a mellow and astringent taste in the mid-palate It is rather dry.

Every year I buy two bottles for myself and drink one bottle right away and the other after letting it sit for a while. It's a fresh, lively, sweet and tasty sake when drunk immediately, and it doesn't lose its flavor when left to sit. Both are delicious 😋 Great woodcuts.

Bought at the end of a drinking session as it was the last time it was brewed with Isehikari. The aroma of the first sip is very good. When you put it in your mouth, the aroma and flavor of the rice spreads and it tastes delicious. As it goes down the throat, it becomes sharp and clean. Okutanba is delicious. I drank it after a week, but it tasted a little bitter. It is best to drink it right after opening the bottle.

Purchased from the brewery web store. It came with a stopper with a hole in it. They said they would replace the stopper after arrival. They were afraid to do so...but they succeeded. It was put in the refrigerator. According to the explanation on the website, there are two kinds of sake: the supernatant and the nigori, so I tasted the supernatant first. It is easy to drink, refreshing, and has a nice sharpness, and it goes down your throat easily. It was delicious. Next, we had the nigori. It is also delicious with a full-bodied and umami flavor. Both were delicious. You can never go wrong with Okutanba.

Sake rice developed to be grown in northern Hyogo Prefecture Parentage is Yamada-Nishiki, but the characteristics are an early maturing variety instead of Gohyakumangoku. The variety name was written in Roman characters for the first time in Japan with the aim of exporting. Yamana Sake Brewery's Hyogo Sake 85 is available in sparkling, kijoshu and sherry cask in addition to the regular version. It is aged in oak barrels and has a pale yellowish color. The aroma is sweet apple, still close to sake, but it has a concentrated sweetness like raisins and a slightly smoky woody flavor. The slightly smoky woodiness definitely shows the influence of the sherry casks. The taste has a stronger dried fruit and oakiness, and is more reminiscent of a sherry cask whiskey with water than sake. The sweetness and umami that is typical of sake starts to emerge from the mid-part, and the tannin astringency finishes the taste. Overall, the sake is not very sake-like, but the balance of barrel aging is superb, making it a very drinkable and tasty sake.
