It has a mild aroma, and the impression is that the flavor comes forward.
However, around the third day after opening the bottle, the taste changed dramatically. The flavor has become more intense, the corners have been removed, and the balance of sweet and savory has improved. This is delicious! It's really interesting to see how the taste of raw sake changes because it's so unpredictable.
Immediately after opening the bottle, the tangy texture of the raw sake was pleasant. It was a little dry and went well with meat dishes. Because it is easy to drink, I drank about 4 cups unusually.

Soft texture, moderate sweetness. Exquisite balance😋.

This is the last of a set of three bottles from Kobayashi Shuzo Honten.
Compared to the brewery's dry, crisp, ultra-dry junmai sake Hakata no Mori, this is a dry sake with a round, soft texture.
The snack was sauteed bonito (looks like grilled beef...) with myoga and garlic tube.
For sake lovers, it is a great souvenir to be able to taste local brands and types of sake that are not distributed in the metropolitan area.
I bought it at the Shinkansen station and decided to drink it on the way home.
It has a clean or watery entry, with a hint of sweetness in the beginning, but it's crisp.
