It has a mellow taste with a refreshing summery mouthfeel, yet the umami of the rice can be felt.
While many summer sakes are light and refreshing, this was a well-balanced sake that I liked.
It's been a long time since I've seen this one, too.
It is easy to drink with a refreshing sweetness 😌.
There was also a white label Gassan at the store, so I'd like to try that next time 😋.
The order of umami, acidity, and bitterness is expanding.
The umami and dryness of the rice are well developed, while the acidity is moderate.
After drinking this year's Gassan Spring Sake at the store, I was hooked!

The overall flavor is gently enveloping.
The aroma is subtle, but grape-like. However, it is not gorgeous, but rather dry.
It has a subtle sweetness and a smooth texture that flows down the throat without any resistance.
We enjoyed it with the first bonito sashimi 😊.

The label reads,
Slightly sweet, slightly mellow, and fragrant.
The aroma from the glass is subdued, but when you sip it, the ginjo aroma is enhanced.
The lack of freshness enhances the rich flavor.
It is just the right season in May, and I would like to enjoy it with sake slowly over the weekend.
