The common denominator is a clean, smooth sake with a slight greenish smell like barley or bamboo. It's a Junmai Ginjo, but it has a soft aftertaste that retains the flavor of the rice. Wakatakeya is a sake that is supposed to be drunk at room temperature.

Good evening. I live in Fukuoka, but I haven't had a drink at Wakatakeya yet. I've been wondering about it for a long time. I'm going to try it next time.

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

Pasteurised sake. Shinriki rice, Fukuoka yeast n 44 and Koji Hishiroku n 430. +2 Yama Kujira Sake is the fourth in the annual collaboration series between director - producer Tsui Mark, Okra Hong Kong and Wakatakeya. This one is pasteurised, they made the Nama version too. Really oily notes and crushed velvet. I had a really acidic feeling for the first two sips but after that became toma really pleasant and balance taste.
