#I couldn't take a picture Unusually for a Niigata sake, it has a strong acidity and plenty of umami. Yet, as the subtitle suggests, it is tangy and spicy from start to finish, a flavor I have never tasted before. The spiciness is similar to a slight effervescence, but it's spicy instead of fizzy. It can be served with sashimi, by itself, or with shochu soda. I will drink it again when I see it.

It was bottled immediately after the vatting. It is said to be +10 dry junmai raw with a tingling carbonation sensation. Sake rice is Gohyakumangoku and Koishibuki, rice polishing ratio is 65%, and the yeast is Association yeast 1401. It is well chilled and very refreshing! It is clean and dry with a hint of acidity at first ✨. It is a type of sake that can be drunk smoothly. The impression of dry and refreshing is so strong that it is easy to see the contrast with the sweet sake I had one time before! It is perfect as a mid-meal drink, with a slight tingle and a slight carbonation. The rice flavor is also apparent as you drink it. Even after a little time has passed, the spiciness remains, and the spiciness and the umami of the rice seem to blend together. This is recommended for sake lovers!

The 10th Meishu Kikizukai IN OSAKA ⑦ Matsunoi Sake Brewery / "Ryoukai" and "Matsunoi", Tokamachi City, Niigata Prefecture Matsunoi Sake Brewery is located in a snowy region famous for producing "Uonuma Rice," and water from the Shinano River gushes out of a side well. The brewery brews sake with very soft soft water as brewing water. I think I drank it a long time ago, but I don't remember it well, so I tasted it. Ryougo Special Junmai Unfiltered, Bottle Fired Aged for one year. It has a hard, minerally impression of sake, but not much sense of aging. It has a clear to bitter taste. Ryougo Special Junmai Snow Storage White Eagle Stored for 4 months. It has a mild rice flavor. Ryougo Ginjo Yukinaka Storage White Tiger 4 months storage. The ginjo aroma is not too bright. It has a clear flavor without a sense of maturity. Matsunoi Ginjo Koshi-tanrei Fukuro Shibobori Gentle and clear sweet flavor, but not too sweet and refreshing. This is delicious! Matsunoi Special Junmai Made with Takananishiki. It has a unique aroma and taste.
