Miyasaka Brewery is famous as the originator of Shichi-go yeast. This is the Miyamanishiki version of the lineup of different rice varieties of the No. 7 yeast. The label says it has a sharp and tight impression, but is it?
I have never really thought about the impression of the No. 7 yeast, but in this sake, the impression is that it is fruity with a delicious rice flavor. The acidity is low, so it may be similar to peach.
The concept and quality of this bottle, which is unique to Miyasaka Brewery and makes full use of the characteristics of the yeast, are both solid.
