The expensive one of Ippongi! I've never drunk anything higher than Jungin before because I've always had a bit of a problem with Ichihongi.
The aroma is quite gorgeous and sweet! The sharpness is still there, but I'm surprised that this kind of sake is also available.
It is delicious, with no cloying taste, and the Fukuro-hozuri (hanging in a pouch) technique really comes to life!
The fact that the brewery's highest-grade sake is Sakahomare instead of Yamadanishiki is also a good sign of the consistency of the philosophy.
