The brother of the brewery gave me a little tour of the brewery ^ ^ ^.
Dark ❗️
It has a thick sweet taste and a bitter taste of alcohol. At the end, there is a faint shuwakku (a slight sourness)^ ^ ^ Somehow it has a sense of maturity even though it's a raw sake.
I want to roll it slowly on the bottom and savor it slowly 🌟.
On a business trip to Tokyo, I had a luxurious moment to compare Miyamanishiki and Kinmonnishiki ✨, which reminded me of Nagano, a place I haven't visited for a while.
It is said to be a blend of junmai daiginjo with junmai ginjo sake.
Overall mild umami and sweetness. The sweetness lingers quite a bit later in the flavor.
This is silver Hokushin style! Yamada Nishiki!
It has a great sense of balance as is typical of Yamada-Nishiki, but it is very tasty with a gorgeous and delicious taste (≧▽≦)
It is better to enjoy it by itself without any dishes. But it is also great with stir-fried chicken with green onion and maitake mushrooms, and bonito sashimi!
It was a small bottle of 300ml, so it was instant kill...( ≧Д≦)

Bright red Hokushinryu (≧▽≦) I bought it after a free tasting at a sake brewery, but it was an impulse buy, almost like buying a jacket (lol).
(First of all, I was surprised that it was a free tasting!)
When I first sipped it, I thought it was a fruity apple sake, but it's a great food sake with umami and complex bitterness! It's gone in a hurry! (I don't have the vocabulary to describe it...)
With fried eringi mushrooms and green peppers, bonito sashimi, and takikomi-gohan with mushrooms!

Miyamanishiki from Nagano Prefecture ✖️prepared with wine yeast Sour green apple-like fruit flavor. The label says it is easy to pair with food, but it seems to be a good choice for pairing. Serve with white dressed persimmon, apple and celery salad, etc.

This sake brewery seems to mature their sake in their own brewery until it is at its best before shipping, and this Hokushinryu is one of the rarer ones, being served as a raw sake before aging. It has a gorgeous aroma that spreads on the palate, and its sharpness makes it ideal as a mid-meal sake.
