October 31, 2023 Japanese sake and food at Miketsubi in Matsuyama City. I was served a recommended brand of dry sake. The fourth glass was Izumo Fuji Junmai Ginjo Super Dry. It was the first time for me to drink this brand. It is my first time to drink this brand, but I personally like it because of its clean and beautiful taste. I personally like it very much. I think it is the best one I have had so far. I think it was the best among all I drank this time. This is the first time I have had this brand, but I personally like it very much. The three kinds of delicacies (ayu fish Uruka, oysters in salted malted rice, and konokawa), hiretu, and konokawa were served. (ayu fish Uruka, oyster in salted malted rice, and konowata), and ray fillet, and rare cutlet of beef. I enjoyed it with a variety of dishes.

Sake in the fridge is reduced to zero. Aoki Shoten after a long time I got a bottle of Izumo Fuji, which I haven't had in a long time, unfiltered raw sake. The aroma is not strong. The first sip is full of umami and richness. I felt something similar to sweetness, but it didn't bother me. This is delicious. My recent goal is A bottle in a month. But today I bought a bottle of Hirotogawa Junmai Ginjo Nama Shu... Well, it's all right.

The light snow that has fallen on the frosted bottle gently dances as the bottle is opened. The smooth and silky taste, accompanied by a soft gaseous sensation, disappears, just like a cloud of light snow falling from the night sky. Jay & Nobby drank this last season and I really wanted to try it 😊. Snow white with a golden tinge that leaves a slight transparency. The aroma is youthful and fresh. Freshly cut young pears. The aroma is of rice, like freshly pounded rice cakes. The texture is fine and silky. The gasiness is strong, yet soft and gentle. The clear sweetness and gentle acidity that spreads after being absorbed into the palate are woven together to create a pear and white grape juice flavor. The refreshing overtone is also pleasantly intoxicating. The softness of the tailings flows silky smooth. The sharpness is good and disappears like light snow. On the third day after opening the bottle, the dryness increases and the freshness and lightness come forward. The taste is fresh and lush, like a 21st century pear with reduced sweetness. Love it to say the least😊. It's so good ☺️ I'm proud that there are such great sakes out there while the buzz and popularity tends to be concentrated on the so-called three major nigori sakes. More sake I definitely want to buy next season 🍶.

Izumo Fuji, snow cloud Exciting with caution against spills when opening the bottle. It was pizzazz when I opened the bottle! The rice flavor and sweetness is really good, but the bubbles and slight bitterness come through nicely despite being nigori (nigori) sake, making it very refreshing to drink. I prefer it in a flute glass rather than a Riedel O glass. The sweetness and umami are very pronounced.
