100% Yamadanishiki produced in Hyogo Prefecture.
Rich sweetness like honey.
The astringent bitterness that comes afterwards gives it a nice sharpness.
The rich flavor does not overpower the food.
It also doesn't interfere with the food.
I paired it with scallops and pork shabu-shabu, and it enhances the flavor of the food.
The best food sake.
Production date: December 2023
Strong, full-bodied nectar-like sweetness.
The bitterness that comes with a hint of bitterness refreshes the sweetness and disappears quickly without leaving any aftertaste.
It has a strong flavor but is very sharp.
It is robust but light.
It is so delicious that you might drink too much of it.

🌸"Kudokibe Junmai Daiginjo"✨
This is a special limited edition sake from Hasegawa Sake Shop!
First, pour it into a glass and you'll be entranced by its clear, transparent color 👀✨✨.
As you approach the aroma, a gorgeous sweet aroma reminiscent of ripe strawberries 🍓 spreads softly.
As soon as you take a sip, the juicy, muscat-like flavor bursts onto your tongue, leaving a light yet profound aftertaste...it was truly a "sake that tastes like fruit" 😋.
What was even more surprising was about the rice used for this sake, Kokuryo Miyako.
Kokuryo Miyako was grown all over Kyushu before World War II, but it was labor intensive to cultivate and had the disadvantage of being tall and prone to fall over.
As a result, it gradually disappeared and became a "phantom rice" that only remains in records.
However! With the cooperation of local farmers, the rice miraculously made a comeback from only 12 grains of seed rice 🌱✨.
The rice was so honored that it was chosen as the rice offering for the Emperor Showa's accession to the throne, and to think that it has been revived in the modern age and delivered to us as sake... it is deeply moving 🥹.
As the name of the brand "Kudokibe" suggests, it has a gentle and fruity feel on the palate, and I found myself being drawn to it more and more.
☀️
I can taste the flavor of rice 🌾.
There is also a slight carbonation 🫧.
I wonder why there is no sweetness even though it's Jr. 🤔.
It's a completely stoic type that caught me by surprise😇
Color
Slightly transparent
Fragrance
Pineapple aroma
Taste
Attack is normal, fresh melon-like image
Sweet and sour in equal amounts, maybe not so much bitterness, ...dark sake
Aftertaste
Good sharpness
good as a mid-meal drink
Fat to △
It is juicy and has a strong umami flavor.
It has a little bit of alcohol content, but it has a lot of umami and would go well with strong flavored food as a food sake.
★★★★★

We opened the second bottle while reminiscing! (Laughs)
Kudokidouge-uma-uma! Yamagata-uma-uma! We enjoyed the evening after returning from our trip! (laughs)
