It's been a while since I've had a sake with Ogawa yeast 😊.
It's the same rice as the other day's Jikin, so I'm going to have it as a drinking comparison based on my memory and the past logs.
When I opened the bottle, I could smell the sweet aroma of fresh melon and white sugar. The taste is sweet, but the base is sour and has a soft sweetness that is not too strong, and the low alcohol content makes it easy to drink and very tasty.
The finish is a little spicy and heavy, expressing the volume of the sake. ☺️
First Kudo in a long time and a very satisfying one 🙌

Purchased at a supermarket since there is no direct sales from the brewery.
It has a delicious fruity aroma and sweet and sour taste.

44% polished rice gives it a strong flavor, but it's still polished, so it's very tasty and has no cloying taste.
I had a chance to try a Yamadaho sake from another brewery and found it to be too light, so I tended to avoid it.
The third picture is a lunch at a western-style restaurant that I always pass by when I go to Takimoto and have always wanted to try. The pork cutlet was delicious 🎶.

But it is not just sweet, but has a moderate acidity at the same time as the sweetness.
The sweetness comes from apples and rice.
The combination of these and the acidity gives a honey-like sweetness and a lactic acid bacteria drink-like sweetness.
The acidity accompanies the aforementioned sweetness as if to enhance it. The acidity is not harsh, but pleasant.
As the temperature of the sake approaches room temperature, it becomes easier to sense the umami of the rice.
The lingering aftertaste after swallowing the sake covers the mouth with the fruity sweetness and flavor sensation felt on the palate and a moderate orange-like acidity sensation.
There is also a moderate acidity and alcohol sensation in the nostrils.
This is the moment when you realize that this is not sweet and tasty fruit juice, but sake.
