Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga.
It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋.
Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️

Nakazawa Sake Brewery / "ICHIHAKU" Higashiomi City, Shiga Prefecture
The current head brewer, Kazuhiro Nakazawa, who closed his business in 2000, was asked by Daijiro Hata, the head brewer of Hata Shuzo, to brew his own sake at the Hata Shuzo brewery. In 2015, he revived his own brewery, which he had longed for.
There was also a draft sake, but I was told to drink the light nigori, so I tasted and compared all of the light nigori.

As soon as you put it in your mouth, you can feel the thick richness of Junmai, and it is rich and delicious. This is my favorite type.
Ichihaku Junmai Ginjo Light Nigori
It is also full-bodied and has a bitterness chasing after it. It tastes a little bitter.
ICHIHAKO Nama Hashiro, light nigori
A little bitterness from acidity like a sake yeast yeast yeast. Easy to drink and smooth.

A collaboration sake with Shuichi Ikeda, the voice actor who plays Char in Gundam. I wanted to try it, but was not impressed and thought it was a little spicy.
I was already thinking that there might be a lot of Shiga sake that I liked, so I decided to focus on the booths that I was not familiar with and that I did not see within my radius of activity.

I don't remember too many details, but it was clean with sweetness and good acidity. It had the freshness of a fresh sake, and was refreshing. I would say it was sweet and fruity to the point of being sweet.
Personally, I prefer fire-aged sake.
