So here is another sake from a new brewery. Shichikanma Special Junmai by Hiaukami Seishu!
This sake was recommended to us by a local liquor store as it goes well with warmed sake!
Let's have it right away!
First, the aroma. Not much of an aroma!
Cold.
In the mouth, you can feel a slight sweetness from the umami.
From the mid-palate, a little complexity and a little bitterness.
Finally, there is a refreshing spicy aftertaste.
Overall, it is a refreshing sake.
I think it's more of a dry sake, but you can taste both umami and sweetness.
Warmed to lukewarm
The first impression on the palate is of spiciness and bitterness. But it is smooth, so the sake taste is not too strong.
After that, it changes to a distinctly dry sake, with a traditional sake taste and a complex flavor.
There is also a hint of sweetness behind the dryness.
Small sakes are very useful when you want to drink a little more!
