若いビジネスマンが50年ぶりに蔵を復活 江戸時代中期に創業した大嶺酒造。株式会社として設立したのは大正11年(1921年)ですが、1960年代に入って休業の憂き目にあってしまいます。しかし2010年、50年以上の休眠を経て復活しました。蔵を引き継いだのは、ニューヨークなどで海外ビジネスの経験を豊富に積んだ、美祢市出身の秋山剛士氏(現大嶺酒造のファウンダー)。農業と地域資源を軸に、地域の未来につながる産業をつくりたいというコンセプトのもと、新しい大嶺酒造がスタートしたのです。 地元の恵みを生かした酒造り 美祢市は3億年の歴史をもつ神秘的なシラス台地の「秋吉台」、東洋一の鍾乳洞「秋芳洞」など、雄大な自然を誇る場所。仕込み水は日本名水百選に選ばれている「弁天の湧水」を使用しています。神社の境内から湧き出る清水はコバルトブルーの美しい色で、酒造りに必要な天然ミネラルを多く含み、「Ohmine」シリーズの味わいに欠かせません。米は契約栽培の山口県産山田錦のみ。さらに、日本酒のピュアな味わいを感じられるようにと、発酵を抑える新技術を用いて、原酒にもかかわらずアルコール度数を14度に抑えています。 さらにこだわったのが、ボトルデザイン。秋山氏はスウェーデンに渡り、北欧で有数のデザイン集団「ストックホルム・デザイン・ラボ」の創設者と面談し、デザインを依頼したのです。そして完成したのが、コニャックなどに使う白地の陶器に、黒地の米を描いたシンプルなものでした。個性的なデザインが増えている昨今の日本酒のなかでも、特に印象的なデザインです。スタイリッシュなラベルと、アルファベットを用いた銘柄名には、国内はもちろん、海外に日本酒を広めたいという思いがありました。 海外マーケティングで評判呼ぶ 外観に負けないスタイリッシュな味わいが、ミシュランの三ツ星レストランや、さまざまなブランドとのコラボレーションなどを通して高く評価され、ニューヨークや香港など、世界6ヵ国で展開されています。2013年には、スイスで開催された、ダボス会議2013のなかで、日本政府が主催した晩餐会で各国の首脳に振る舞われました。SAKETIMES | 日本酒をもっと知りたくなるWEBメディア

While many autumn sakes are matured and have a great flavor, this one was a bottle of Ohmine, which is a raw ogara-mi sake and Omachi, which can only be imagined as fruity. I couldn't resist the urge to buy it. After opening the bottle, it had a nice aroma, and when I drank it, the acidity was quite gentle, and the expression "yellow peach" was exactly right. In addition to the mildness of the molasses, the alcohol content is only 13%, which makes it easy to drink too much. This sake is one of the most delicious sake of the year that I have ever tasted.

On a three-day weekend, I went to see my second son's dance event at a nearby park. Dancing under the scorching sun! Everyone was exhausted from the heat 🥵. The people watching the event were also exhausted from the heat 🥵. The heat in September is likely to continue, so please be careful! I drank three grains of Dairei summer sake during the holiday weekend. Yamada-Nishiki has a refreshing sweetness that is delicious 🥰. To be honest, I tend to avoid purchasing hiyaoroshi because it has a strong umami flavor, which is somewhat different from my personal taste. However, I bought Omine's hiyaoroshi because it was a bit special. This hiyaoroshi is a freshly-pressed Omachi, so I had high expectations that it would probably be fruity. When I actually drank it, I found that it did indeed have the umami of rice typical of hiyaoroshi, but it also had a grape-like acidity and full-bodied flavor. It is an extremely good sake that balances the hiyaoroshi-like umami with sweetness, acidity, and richness. It seems to go well with Camembert cheese, too. It may also be good with salty foods.

It's mellow with a heavy ripe fruity and sweetness, like a ripe peach or banana. Is there brown sugar in it? I thought for a moment. The aroma and taste are broad and deep. I would like to drink it by itself, not as a food wine. It is very delicious. I used to prefer fresh and fruity new sake and nama sake, but I think my perception is about to change. It's like the difference between shinzake/nama-shu -> cake with fresh fruits and ohmine hiyaoroshi -> stollen with dried fruits... I like them both. (I like both... (maybe it's similar to Fuku-komachi's Kijoshu? (I thought it might be similar to Fuku-Komachi's Kijo-zake, but I'm not sure)

Delicious 🤤. It's so delicious 🤤. Refreshing hiyaoroshi, crisp but not too sweet. I always think Omine-san is quite a bit sweeter than I expect, but this one betrayed me in a good way: ☺️ Modest sweetness and aroma that goes well with a meal. Delicious 😋.
