The mellow aroma of unfiltered, unpasteurized sake spreads in the mouth, and the sake lives up to its name. The flavor is as intense as expected, but I was surprised to find that the alcohol and sharpness after swallowing were very good.
For me, the aroma was more of a crisp nose than a pungent one, and I enjoyed it 🤤.
A miso shop we stopped by on our trip to Nasu handled a lot of local sake and recommended it to us as a sake that goes well with hot pot. It is one of the young toji's various challenges in the limited edition of Hitotaru, and is called Re: because it is a re-engineering of the Kuho sake he made a long time ago.
I usually drink sweet, slightly sparkling sake, but this one is delicious with full-flavored umami and a smooth, smooth taste!

This is indeed a spicy, dry sake.
