This is a homemade hiyaoroshi🤣 that I purchased around May of this year, drank about half of it, and stored it at room temperature.
I remember that when I drank it in May, it was a mildly sweet, dusty sake.

But when you drink it, it becomes soft and soft, and then it slowly becomes minerality and a little sweetness like syrup, and then it gradually pulls up with a bitter and spicy feeling.
When lightly cooled to 10°C, the spiciness is slightly reduced and the sweetness is followed by bitterness.
When heated to 40°C (104°F), the pungency becomes stronger.
Raise the temperature to 45°C and the spiciness becomes mellower, while the temperature of 50°C is similar. The sweetness is reduced, but if you are looking for sharpness and impact, warming is the way to go. When cooled from 45℃, it becomes sweet again. 50℃ keeps it tingling, but when cooled from 50℃, it is still pungent.
It is often said to be a typical sake, and it certainly gives that impression. The change with temperature is also interesting. This is not a low-end product normal sake 😳.
It won't change at all if left at room temperature (by the way, it was produced on December 24, 2022, just six months before opening), and it's not heavy, so the cup will go on drinking.
The only drawback is that there are only a few stores that sell it, but there is no shortage of it as a regular sake at all.

I got this sake in Urawa that I really liked after drinking it in Niigata 😆 Mellow and mild ☺️. Creamy. I can drink as much as I want. I think it's the best daily sake at the moment. It goes well with sea bass, bonito sashimi, shrimp garlic shrimp, mushroom myoga and 😋 everything.
