This is a homemade hiyaoroshi🤣 that I purchased around May of this year, drank about half of it, and stored it at room temperature.
I remember that when I drank it in May, it was a mildly sweet, dusty sake.
It does not have much of an aged aroma. I think the sweetness is a little lessened and the umami is stronger. I didn't feel much sourness. Yes, it is delicious👍.
It seems to be a strong sake and can be aged for a longer period of time.
It was gone before I could try heating it up! My wife didn't calculate how much to drink 😂.

It's 16-17%, which is high for a regular honjozo.
It has a subtle but light ginjo aroma. It's a Niigata honjozo, but it has a round voluptuousness and sharpness. ⚡️ And it complements the food, but doesn't interfere with it at all.

It's just delicious😍Although it's alky, you can hardly smell the alcohol smell even if you drink it cold, chilled or lukewarm. Not so good when heated 💦Alcoholic
The aroma in the glass is a little vinegar-like, but not sour.
