Today's dinner. Dewazakura is recommended by Rui Yoshida. I enjoy it with oden, but it would also go well with nabe (hot pot). It is delicious and never gets old!
I opened a bottle of Dewazakura's "Yamahai-shikomi," which was recommended to me at a sake shop on my trip as a sake that would be good for warming up.
The first sip was cold. The pleasant acidity and clean taste were impressive. Next, we enjoyed it warmed. The pleasant acidity remains, while the rich umami flavor fills the mouth. It would be great with oden with dashi broth.

Long time no see. The Dewazakura Brewery in Yamagata does not sell directly, so we opened a bottle of this one we got from a neighboring liquor store on our train trip.
It has a beautiful acidity and a tight, umami flavor. As a food sake, it seems to go well with a variety of dishes.
