I bought this sake from Abe Sake Brewery at Nishikiya Sake Shop near Niigata Station during my trip to Niigata on November 3! They didn't sell the Hiragana "Abe" sake, but after listening to the owner's story and seeing my friend buying it, I bought it!
First, I took a sip!
Wow! How gorgeous!
The label looks like an ordinary sake, but it is a modern sake. As one would expect from Abe Sake Brewery!
The pineapple-like aroma spread gently and there was a slight gassy feeling. The aroma was like a little dance with a little bounce, and I thought it was the right choice to put it in a wine glass. When you put your nose in the glass, you can smell it well and enjoy it.
After a little time, the aroma of rice is stronger and has a sake-like feel.
Delicious!
This is one of the "field specific projects" that Abe Sake Brewery is working on!
The basic concept common to the series is as follows
Rice: Kashiwazaki rice
Sake mother: Kimoto brewing without additive yeast
With these common conditions, the characteristics of each field are expressed in the taste.
Other types include "Akada," "Kaminawa-shinden," and "Noda. I have seen Noda and Akada in "Sake-no-wa" posts, but I have not seen this one.
Drinking several kinds of local sake at dinner on a trip to Niigata!
First up is the first kind.
Fire-aged black "Vol. 1-2" brewed with Niigata G9 yeast and Niigata rice (80% polished rice). Rich taste and pleasant acidity. A sake that lingers in the mouth. Delicious!
Abe The second in the series, this time it is Noda, a field-by-field project. There are other rice fields in the series, such as Kamiwashinden and Akada, and this one was given to us as it is said to be one of the most highly rated rice fields in the series.
It is surprisingly clear and refreshing, with a hint of sweetness and a slight fizz, and is very tasty!
Tonight is the last day of an early three-day weekend. I'm cooking dinner and starting the evening drinks. ☺️
ABE THE SAZANAMI Naokumi Namaisake Orikagarami 2024BY✨.
It is the straight pumping Ver of SAZANAMI.
The stopper is a crown type, and it takes about 5 minutes to release the gas little by little.
The aroma is weak lactic yogurt. The taste has a sourness with a hint of Japanese pear and a moderate sweetness, but the aftertaste is quite dry, which I personally like, and the sake goes down smoothly. It is delicious 😋😋😋😋.

The sake is made with shochu made with sake lees from Abeno during the production process.
There is a slight tanginess.
The aroma is slightly fruity but not strong, with a hint of sweetness.
The aftertaste is not long and clean.
