Whale wave Junmai Unfiltered Nama
Hidahomare 100 60
17-18° 23/6 A+
Gifu Nakatsugawa City Ena Brewery
1800 2860
This is the first time I saw this sake.
The name is not "Geiha" but "Kujira-nami" which means "whale wave." The clouds flowing over the mountains were made to resemble whales, and the label is also a whale.
The label is also a whale. The taste is also medium (no indication, but is it a pure sake?). It is not flashy, but the moderate acidity gives it a relaxing flavor that can be savored slowly.
It is a good sake that does not interfere with food, but keeps you going.
Gifu sake!
Whale wave🐳 with an unusual name for a prefecture without a sea.
The view from the brewery,
The name is said to come from the fact that the clouds flowing over the mountains resemble a whale swimming in the ocean.

It came as part of a set with other sake, so to be honest, I wasn't expecting much,
I wasn't expecting it to be so good, but I was pleasantly surprised ✨.
The aroma was understated yet fruity 🍈🍇.
The taste is said to be a dry sake, but it has sweetness and umami!
The taste is said to be dry, but it also has sweetness and umami!
But it is gentle anyway!
There's no harshness or jittery taste, it just goes down smoothly ✨.
The strongest theory of sweet and refreshing!
I found a delicious sake 😋!
I think set sales are not so bad because of encounters like this 😆.
Good evening, kino.🌙
It's nice to have an unexpected encounter! It makes me feel like I'm getting something out of it😁I'm also interested in what you bought with this drink: ❣️
Hi Pon!
I think the set sale is a great way to get to know different types of sake, as I tend to choose the most popular ones when I make my own choices😊.
The sake I bought with you is Jikin👍
Hello 😃
I think it's because there is a lot of seafood consumption in the sea-less prefectures, or they are very particular about their seafood 🤣.
I thought because it is a whale, it would be a dry and robust type of sake, but it is interesting to know that it is the exact opposite 👍
Hello etorannzyu!
I heard that there is indeed a statistic that Gifu people like sushi 😆.
I was also surprised because I totally thought it was a classic sake ✨ I guess it might taste different when it's fire-aged because it's calmer 😊.
Good evening, kino.
I've always been curious about it but I've never been able to buy it because the liquor stores that carry it are sometimes closed even during business hours 🤣📞I'll fly over if you call 🤣I knew it was fruity 😁I'm suddenly curious 😋.
This is a bottle that I had been putting to sleep. I think nigori can be creamy and refreshing, but it has a strong umami and a strong habit, but it is delicious! The aroma and taste is like vanilla yogurt, and the balance of umami and bitterness is exquisite. It's a bit of a departure from the modern style, but it's still delicious!
At room temperature. Salty texture despite being at room temperature.
Similar in flavor weight to the Matsuo from the other day.
Cooked rice does not smell so much in the mouth.
Somewhat refreshing sourness and aroma like honey apple.
Soft, fine, slightly pale rice flavor and a bitter aftertaste that tightens the contours of the finish.
The red flounder stewed with a hint of sansho (Japanese pepper) is a great match.
The sake was chosen to match the dish.
The master is a little scary at first sight, but he is very considerate.
Monzennakacho Moderately
At a liquor store in Nakatsugawa
I was told that this was the best sake to take home with you, and although it was a draft sake, I bought it thinking it would be fine since it was winter.
It was unfiltered but the color was quite clear.
It has a gaseous taste, but at the same time it is fruity and very nice on the palate. The feeling of the end of the bottle is easy to drink. It is easy to drink. It is delicious.
I've bought a bunch of other local sake, but I'm glad I found one I'm happy with first!
Very good purchase.
Rice: 100% Hidahomare
Polishing ratio 50%.
Alcohol content 16-17%.
Transparent with a slight yellowish tinge. A very faint hint of oily air. The aroma is slightly heavy and floral, with an ethyl caproate aroma reminiscent of roses. The aroma is strong. The mouthfeel is sweet, sour, and juicy. The mouthfeel is slightly rich, with an astringent and umami flavor. A slight bitterness appears in the aftertaste, which tightens the whole. It has a medium lingering finish. It is a fragrant and mellow sake.
Just the fact that it's an ogoragami from Kujiranami makes it sound delicious.
The aroma is calm and slightly dry, but it also has a delicious rice flavor, perfect for a mid-meal drink.
