This sake is from Iga, Mie Prefecture.
Half of my blood is from Mie. But I have never drunk much sake from Mie.
It has a long, cool, spicy, and sweet taste. The sharpness keeps you from getting tired of drinking it. I also love the spiciness that leaves the nose afterwards.
How about when it is heated up?
The spiciness explodes with a sparkling sweetness and a crispness.
Bitter, bitter, spicy, and sweet with a sharp and extended aftertaste.
The sharp aftertaste is not dull at all.

A few months ago, I was at a sake tasting at a liquor store I frequent, and I saw a bottle of Wakabisu's sake 🍶.
I had never had Wakabisu's sake before this time, but this was one of the several bottles I bought.

The label also has an apple 🍎 on it, and it tastes like an apple 🍎 too!

I bought it because of the phrase on the label that it was the first attempt at making a sake using the traditional sake yeast yeast.
It has a fruity taste with a hint of acidity, which is typical of the sake's "ikuhashime zukuri" style. There was no dullness, and the quality was so high that it was hard to believe that this was the first time for me to drink it.
I had high expectations for this sake from Wakabisu, but it tasted just as I expected.
