This is a wonderful Kimoto JG. It was used for the opening toast at our wedding dinner. Done I proposed at the brewery, I felt it only appropriate to have it at the wedding
This is a HUGE flavor drink best described as a “umami-bomb”. It would go amazingly well with sushi but stand up to any food you have it with. Be a little careful with it... it is 20-21%
Made with Shinriki rice and Kumamoto #9 rice
Although a Junmai Ginjo, this has the kind of complexity that you often see with a daiginjo.

A fantastic sake for a night with friends. This converted someone who didn’t like sake before because all they had before was from a restaurant that did not have good sake
While there is certainly the flavor you get with a tokubetsu, this could easily be a Ginjo. Paired well with spiced chicken, pesto pasta, and a lemon dressed kale salad
