Complex arrangement of aromas on the nose. Lots of ginjo-ka elements like pear, bubblegum, green apple, but also some other interesting fruit notes like lime, pineapple, blueberries, cherries, and anise. Slightly sweet on the palate at first, but it then fades to a more neutral dry profile, before revealing hazelnuts underneath. Alcohol does feel a little pungent at the back of the throat as it evaporates. Acidic, slightly tingly finish. An excellent daiginjo, just not my favourite style. 3.75/5

Smells a little on the old side. There's cream and dairy, some nuttiness, some pickled vegetables and umami, overripe apples on the nose, with some rice and cereal in there for certain as well. There's still a slight hint of that old taste on the palate, but very different from the nose. Full, nutty, juicy. Plums, sweet like raisins, dried mango, banana bread. Lots of deep, rich, sweet flavours. Finish is short and a little sticky. Started off poorly, got pretty good. 3.5/5

I love the aromas: like a fruit salad with whipped cream. Apple, pear, pineapple, red grapes, milk, whipped cream, maybe raisins as well. Light with lots of dairy, and hints of rice beneath. The palate is clean but with milk and a distinct nuttiness like hazelnut spread, or fererro rocher. Faint hints of apple and a light acidity linger in the background. Finish is quite short, light and clean. I really like this. 4.75/5

Lovely light arrangement of fruits, nuts, and cereal on the nose. Green banana, fresh almonds, garden herbs, apple, mushrooms, steamed rice. Palate is a little more junmai-esque, bringing the flavours to a more grounded, earthy level. Cereal notes of steamed rice and rice bran, but with a distinct candy-like sweetness. Acidity is low, and umami is present but not a main feature. Finish is mushroomy with a hint of sweetness. Feels like a honjozo. 3.75/5

This smells almost like a white wine. There's white grape, unripe pear, and almost something like cedar? Like a taru sake. It reminds me of champagne on the nose. Maybe a hint of nuts. Palate is a good balance of bold, tangy acidity and deep umami. It does not feel heavy though, and the acid and umami help to keep this quite dry and refreshing (served chilled). Apple, caramel, chestnuts, and perhaps something like cinnamon. Finish is dry, but lingers with umami and nutty notes. 4.25/5

Interesting nose: on one hand we have brought, juicy tropical notes of pineapple, lychee, grape, bubblegum; on the other I get something deep and umami like nuts, burnt sugar, and maybe even like apple vinegar? Not sure if my imagination. Ah, something like pickled vegetables maybe explains the nose. Certainly more nuts and umami than sweet, fruity summer sake. Memories of summer indeed - perhaps brewed a few summers ago? Decent, but not what I want from a "summer sake". Feels old. 2.75/5

Really nice, juicy, fruity aromas. Orchard and stone fruits, with lots of pear and peach, nectarine, maybe also grape. Rice flour, almonds too maybe. Very juicy, with a great, vibrant acidity. A touch of sugar, then it all fades away quite quickly, leaving behind faint traces of dried fruits, nuts, and umami. Finish is almost non-existent: very light and clean. Really good summer sipper, served chilled. 4.75/5

Taru sake. Apple, wood, and tatami floors. Fairly straightforward for a taru sake. Palate continues the theme, but with a gentle sweetness of pears and orchard fruits. Fairly typical flavours of wood and cedar. Finish is medium, with a tingly acidity to finish up. Good, refreshing, but also a little heavy on the word to be truly a good, light sipping sake. 3.75/5

Creamy, fruity nose. Melon, apple, ripe banana, cream, perhaps yoghurt or fresh cheese, berries, rice porridge, and something vaguely nutty. Really light and clean on the palate. Crisp rice derived umami, very faint hints of fruit and dairy, but mostly cereal notes and a good acidity. Finish is very short and clean. Quite simple, but a really good sipper. 3.75/5

Medium aroma intensity, but a very textbook ginjo bouquet. Green apple, pear, lychee, melon, with a hint of dairy or lactic. Surprisingly straightforward but well executed. The palate is very different and provides a real punch of mature cheese and cereal, with a sweet coating. I'm not sure if this is intentional or a fault, but I don't think I like it. Finish is short and sticky. 1.75/5 This got better after a couple of days. Less cheese stank. 3.75/5

Very aromatic, with lots of ginjo aromas. Bubblegum, peach, strawberry, green apple, pineapple, lychee. The palate is quite different and distinctly features cereal and nuts, like chestnuts and roasted almonds. It reminds me of the milk left after eating a bowl of chocolate cereal. Certainly a hint of dairy, and with some good, clean astringency. Finish is medium, with umami coming and going as the flavour slowly fades. This is really quite enjoyable. Yappari Hakutsuru know their stuff. 4.5/5

Very interesting bouquet of aromas: half fruity ginjo, and half deep, dried fruit, pickles and mushroom umami notes. Alcohol is pungent, but overall intensity is surprisingly low. Pineapple, plum, rice, mushrooms. Body is very rich, lots of umami. Pickled vegetables, nuts, mature cheese, mushrooms. Acidity is medium+, alcohol is prominent. Finish is on the short side but not crisp, rather smooth and fades quietly. 4/5

Pear, pineapple, bubblegum, rice flour on the nose. Very very pleasant ginjo aromas, quite light and elegant. The palate is light and juicy, with more pear and orchard fruit flavours. Medium body, yet with a distinct astringency that really tightens up the end of the palate. Finishes with green apple and white grape. Very good. 4/5

Soft and smooth dairy aromas are very prominent in this ginjo. Lots of notes of fresh cheese and cream, backed up by hints of green banana, almonds, and nectarines. The palate continues this very soft and smooth profile, with a slightly nutty flavour among the dairy notes, and a creamy texture. Acidity is low, but there is a notable astringency to the end. I quite like this. Unassuming but very well done. 4/5

Light, creamy, with dairy notes and hints of fruit on the nose, featuring bananas, milk, fresh cheese. Faint aromas of fresh nuts. Very light and clean on the palate. Almost none of the fruit of the nose, with little cream. Mostly rice, some dairy and lactic acid. The dairy notes return towards the end with rich milk, nuts, and umami. Finish is long and a little sour. Quite interesting for a junmai ginjo. 3.5/5

Bright "yellow" aromas. Lots of juicy pineapple, mango, some bubblegum. Also a bitter note like pepper or basil or anise. Very very soft on the palate, with a much more umami and nuts-forward than one would expect from the nose. Medium acid comes in at just the right time to tingle the corners. Body is medium-full. Quite an interesting profile overall. 4.25/5

Lots going on in the nose. Thick, sweet banana and peach, with layers of lactic acid, cream cheese or sour cream, fresh cut grass and almond milk. Very thick on the palate, mouthcoating texture. Big flavours, featuring caramel and toffee alongside shiitake mushrooms and deep umami. Baked banana, brown rice, and roasted chestnuts. Finish is long and nutty, yet surprisingly dry for an overall slightly sweet profile. 4.25/5 chilled 5/5 warm. My god that is good.

Light, clean and refined ginjo aromas. Gentle apple, pear, white grapes and raisins, with a hint of bubblegum. The palate follows suit, with a very light and gentle profile. Very mild sweetness scents a subtle layer of umami that pops its head in and out. All in all, a very pleasing, but not overly imposing nor complex. Makes for easy drinking and pairing. 3.25/5
