Fine bubbles when poured, like effervescence. Very juicy, with lots of green aromas. White grape, melon, pear, blueberries, overripe strawberries and whipped cream. Fresh, fruity, juicy, bright, but not thick. The palate continues with faint apple and pear notes, but is much more light and clean than the nose would suggest. Hints of rice flour. Acidity is refreshing, with a tingly faint umami at the end. Flavourful yet not heavy, this is dangerously easy drinking. 4.5/5, could do with +1% ABV.

Earthy and grainy on the nose. Slight fruity, bubblegum aromas and apple. Some lactic acid notes. Not very aromatic or complex. Suggestions of aging? Some Hine. Very light and crisp mouthfeel, but with good earthiness and biscuity flavours. Very faint hints of apple over earthy umami. Short, clean finish. This has got to be good warm. Bit underwhelming chilled. 3.25/5 3.75/5 warmed.

Very slightly cloudy. I love the aromas: nutty almonds, grape, green melon, yoghurt. Light, bright, and appealing. Smooth and thick texture, with an almost salty umami flavour. Medium+ acidity, but a gentle sweetness does linger and leave a pleasing aftertaste. Rich, and quietly, elegantly powerful. Finish is on the short side, slightly sweet. 4.5/5

Bright, juicy aromas featuring overripe strawberry, peach, some pineapple, and hints of star anise and basil. The nose is reasonably intense, but occupies only a corner of the bouquet of possible ginjo aromas. The palate is bold and spicy with acid, astringency, and umami each taking turns to stand in centre stage. Raisins bring along a faint brown sugar and caramel-like sweetness. The acid is curiously focused at the front of the mouth with a mouth-watering effect. Medium-long finish. 4/5

Very complex nose of fruit and nuts. There's peach, apricot, red grapes, clear scents of almonds, and a deep umami like shiitake mushrooms. Very nutty and quite sweet. First it's more fresh almonds, almond milk, followed by a thick sweetness of stone fruits and prunes. Mouthcoating, leaving a layer on the lips. Body and umami is full, acid is medium. Finish is medium, with thick feel on the palate. A very heavy, gutsy sake with lots of attitude. 4.25/5

I could smell the aromas from about 30cm away. Rich, juicy aromas come bursting out, full of thick tropical notes like pineapple, ripe melon, bubblegum. There's an interesting layer of white pepper and basil too. The palate is at first bright and vibrant, with more of that interesting peppery, nutty, grassy feel. It fades quickly away from the front of the tongue, leaving behind a tingly acidity in the corners and back of the throat, and good umami. Nice clean finish. Wonderful. 4.75/5

The nose of this sake greets you with a quiet nod of the head, rather than a handshake or wave. The aromas are deep and mellow, with round umami of mushrooms and nuts, and an acidity like rich, mature or blue cheese. The palate is bold with a strong acidity and sharp pungency. More earthy, nutty notes, featuring sweetness like dried fruits. Thick and mouthcoating, but with a light finish. Alcohol tingles as it leaves. 4/5

Textbook arrangement of ginjo aromas: apple, pear, pineapple, bubblegum, lychee. They do not leap out of the glass, but force you to search them out in the glass, only to ambush you all at once. Pure and refined. The palate is big, bold, and decidedly punchy. Strong acidity from the tropical fruit notes, and then an interesting umami layer that then leads into rich, nutty chocolate notes. Finish is medium long, with a very clean, but not that crisp, finish. It's a junmai daiginjo. 4.5/5

Beautiful arrangement of ginjo aromas. Loads of melon, apple, bubblegum, strawberry, with a very creamy layer to it all. The palate is much lighter and rather dry. It is quite straightforward, with clean rice-derived umami. Finish is pretty clean and dry. 3.75 Aromas are wonderful.

Light and airy on the nose. Very subdued fruit tones of pear and melon, with a thick, creamy layer beneath. There is a distinct nuttiness like hazelnuts that reminds me of Nutella or Kinder Bueno. The palate is quite light and crisp, with medium+ acidity. The bold nuttiness is present again, adding body and depth. Overall it is off-dry, with very faint sweetness. Finish is on the shorter side. Could be good warm, or served with a dessert like tiramisu. 3.75/5

Very bright "green" aromas at first, like apple and grass. This quickly deepens into a plum-like sweetness, before revealing a rich, almost meaty tone of mushrooms and umami. The palate is quite thick on the tongue, with a very bold acidity. It is not heavy though, and dissipates rather quickly. Sweet and acidic like nectarines and apricot. However also a sweet, cereal flavour that reminds me of corn on the cob. Short, but not dry finish. Overall very quirky and interesting. 4.5/5

Soft, mellow nose of ripe banana, caramel, chestnuts and hazelnuts. There is a creamy aroma present too, like rich cream or milk. More nuttiness on the palate, with banana and a biscuit-like cereal feeling. Reminds me of banoffee pie with its chocolate like creaminess and nutty, caramel flavour. Finish is light, medium long. Steamed rice, buttered toast, caramel, toffee are present. Body is medium, with decent umami, medium-minus acidity. Finish is short in terms of flavours, but the mouthfeel remains for a long time. "Bright" ginjo aromas of pineapple, lychee, bubblegum, cotton candy, perhaps some strawberry. More interesting is the rich herbal and spiced feel: fresh nuts, mint, basil, cinnamon, star anise. The palate feels quite full actually, with a rich, thick mouthfeel and good, nutty umami. Neither dry nor sweet, there is apple, pineapple, mango. Good acidity. Finish is long, as an extension of the palate. 4.25/5

Wonderful ginjo aromas leap out of the glass: bubblegum and pineapple mostly. Also an interesting herbal feel, like basil or fresh cut grass, with subtle hints of anise and hazelnuts, and maybe even something peppery. Creamy smooth mouthfeel before quickly dissipating. Sweetness like overripe green apple or pear, turns into fresh nuts, banana and fresh cheese(?) in the middle. Decent umami. Finish is on the short side, leaving behind ripe pear sweetness on the tongue and lips. 4/5

Very very subtle aromas of apple are the main feature of the nose. Junmai daiginjo is blended. The palate is very light and soft. There is a certain nuttiness, followed by a buttery feeling. Body is medium and smooth, with a light but refreshing acidity. Finish is on the short side.

Surprisingly aromatic nose, featuring sweet, overripe banana, some apple, raisins, prunes and other dried fruits, and steamed rice. Maybe a slight nutty earthiness. This sake feels very thick on the tongue at first, but very quickly spreads out across the palate and dries off, leaving behind a rich, creamy butter-like feel and flavour. There is good mushroom-like umami, and earthy cereal notes from the rice. Finish is quite dry, but not so light and crisp like other dry futsu-shu. 3.25/5

Really juicy and fruity on the nose. Loads of peach, plum, apricot, nectarine - lots of stone fruits. Some melon, pineapple in there as well. Some lactic acid too, like yoghurt or fresh cheese. Not as fruity on the palate, but good, bold acidity, and good umami. Quite full, but with a very short, kire finish. It is not dry though. More ripe fruits than fresh fruits with a rich nutty feel. Hints of mature cheese. Bold, rich, fruity, lots of umami and character, but very drinkable. 4.75/5

Apples and sweet berries on the nose. Very gentle and elegant aromas. Further hints of banana, melon, strawberry, cream, grapes. Very different on the palate. Full of umami, with a nutty profile. Umami is quite drying, but there is a subtle backdrop of sweet fruit flavours to it all. Is this a mineral rich profile? I can't tell. Finish is medium, with a dry feeling and hints of apple. 4.25/5
