According to the back of the label, it is made with yeast that produces a lot of malic acid. It is not a type of sourness, but you can still feel the acidity. If I were to exaggerate, I would say that the refreshing taste is Xylitol type. But it doesn't give off a chemical impression! Maybe it's because of the pull of the malic acid, but there's also a somewhat green apple feeling. As the day goes on, there is almost no bitterness in the aftertaste. Mild flavor!

Not only is it beautiful, but it is also a food sake with a lot of flavor. It's crisp, and even though it's 17 degrees alcohol, it's not harsh at all! It's very light and not sweet, but I think it's slightly sweet. I think it's just my imagination. If temperature goes up, bitterness is emphasized, so chilled is best. It's summer sake!

Sweetness of Mild Rice Éclair Éclair is also a cool feeling, it's a great sake for summer! Even if the temperature rises a little, it lasts rather well. But it is recommended to chill it well! It has a lightness, but I thought it was close to a balanced type that has a good balance of sweet and spicy. This is the second time I've posted this brand and these specs. It seems I had roughly the same impression last summer! But the difference I was noticing when drinking it was the presence of a tingly tongue sensation. That was my favorite element last time, but this sake is delicious even without the tingling.

Half wine and half sake⁉︎The wine yeast for Chardonnay from overseas and the yeast from Akita are used. It has a clean acidity and a hint of sweetness. There is a mineral aftertaste. and bitterness in the aftertaste! When I drank it two years ago, I thought it tasted like wine. This time I did not feel wine-like as last time, but it was delicious sake suitable for summer to drink easily. After 1 day, acidity settled down and sweetness increased a little!

甘くて"キレる"熊本城復興祈念酒!甘さの余韻は短めで、意外と口の中がさっぱりします。アルコール分は16.3度と高く、飲んでる感あり! 使用米は熊本産の「森のくまさん」というブランド米。調べたら食用米。食用米の日本酒は、個人的に合わないものが多かったのですが、酒米と遜色ない味わいだと思いました!これは白米で食べたくなります♩ 米の名前の由来も発見。夏目漱石が熊本に在住していた際に、熊本を「森の都熊本」と言い表したそうです。「『森』の都『熊』本で生『産』」されたということで命名。冨士酒造さんの熊本への思いは本物! 開栓後、4、5日経って味に丸みが感じられて、美味しくなりました。

It smells and tastes jolly sweet! Rice is Aisan as the name. It is firmly sweet, but the aftertaste of the rice is not too appalling, while leaving a sweet characteristic of the rice. I don't feel much weight in the taste, but body blow like a sure drunk. I noticed that one drunk was completed! On the back of the label, it is described as exotic fruit flavor. If I were to try my best to describe it in my own words, I would say it has a "deep sweetness" combined with a light acidity. I'm not sure what that means!

Eikoh fuji has both lightness and gorgeousness! This brand is an unfiltered, unpasteurized sake, but I think the characteristic of Kourin is its lightness. Immediately after it goes down the throat, it leaves a little bit of a heavy feeling, but the aftertaste is short and I think it's a refreshing type of Eikoh-fuji! And I think tongue tingling is also a little accent. App♩The rice is Dewa Sanzu from Yamagata. According to the back of the label, it says gentle Ginjo aroma, beautiful sweetness! It is purely just delicious sake!

I think the taste is a little different, but it reminded me of a very fresh pear É É É É the aftertaste is not only sweet, but if I may say so, I also feel a bitter-like taste. Laughing Gate with Good Luck Appreciation is sweetness reminiscent of ripe melon! The sweetness is solid, but not stubborn, so the cup goes on! A well-balanced, delicious mouthful! I started drinking it at almost room temperature, and as the name suggests, it had a bit of an aged feel to it. The mouthfeel is more voluminous than normal water. The sweetness, bitterness, and acidity are calm. The sweetness, bitterness, and acidity are calm and easy to drink♩The rice used is 62% Yamadanishiki and 38% Omachi, and I imagine it's a good mix of both! The rice used is not Yamadanishiki, but Yamadaho! It seems to be the parent variety of Yamadanishiki.

A clean acidity that lingers! It was a label buy, expectations were low, but it was a big hit. It's light and you can drink this as much as you want. Shouldn't they give up the name "challenge tub" (challenge tank) and change it to "Yokozuna tub" (champion tank)? And while I was thinking about all that nonsense, it was delicious! Day 2, the acidity and bitterness got a little stronger. After opening it, it's hard to keep the taste.

Dry with a hint of flavor. Almost room temperature at the beginning of the drink. No sweetness whatsoever! But it's not hard to drink. I don't know if this is a good analogy, but I drink it as a very light shochu. It's meant to be a sipping drink, but it goes into your body quickly! The second day starts with a cold sake. On the back of the label, it says it's a little dry. Perhaps because it is an unpasteurized sake, it doesn't have a strong alcoholic flavor, but it does have a bitter aftertaste and a tongue-tickling sensation. It may not be suitable for those who don't like the dry taste.
