Refreshing aroma, pleasant acidity, and a sharp aftertaste.
It is also surprisingly good with garlic-oil-roasted swordfish and watermelon.
Sake also goes well with it.

It has an exquisite balance of rice's original elegant flavor and goes well with thick slices of bonito tataki (salted bonito) and sea bream sashimi.
Kabishin Special Junmai Sake Nagisa no Uta Okayama Prefecture Kabishin Shuzo
Slightly sweet, with a good balance of umami and soft acidity, it goes well with Japanese food.
It is slightly golden in color and has a faint scent of topping. In the mouth, one senses the sweetness of the rice, followed by a dry taste. It has a matured flavor and richness, with a slight acidity, giving the impression of a clean mellow sake. Delicious.
I drank it cold, but it should also be good lukewarm.
It would be a great opportunity to drink this special junmai as a new sake and enjoy a different taste.
