Purchased from Fukushima Prefecture/ Gonoi Sake Shop.
This cold grated sake is new to me.
Organically grown Gohyakumangoku, brewed with a yeast from the brewery's own yeast.
The rice polishing ratio is 60% and the alcohol content is 15%.
It is a fire-aged sake🍶.
The aroma upon opening the bottle was only slightly sweet. I did not detect any melon-like aroma.
When you take a sip, a slight acidity and deep rice sweetness spreads in a whiff. The mouthfeel is smooth. While in the mouth, the rice-derived sweetness can be felt, and as it goes down the throat, the bitterness of the alcohol quickly appears and tightens it up. In my opinion, it has a good sharpness.
It seems to go well with oily food.
The acidity is not strong, making it a perfect sake for pairing.

Recently I have been going out to target Gonoi Sake Shop. I recommend Aizu Shurakukan Watanabe Sota Shoten, but I also recommend Gonoi Sake Shop. Still, Fukushima has a lot of delicious 🍶.
