Cold sake. It's like everything is just right. It's the kind of sake that accompanies food. I don't deny the current trend of "pairing" and "marriage," but it's nice to have when you feel like you don't need it right now. This is that kind of sake.
This season's Izakaya Hachibei Shiboritate Junmai. It seems to be getting easier to drink every year for the past few years. It has a normal alcohol content of 16 degrees, but you don't feel it, and even though it's new sake, it's not too dry. It's a new sake, but it's not too dry.
A sake to drink while thinking that the end of this year is approaching. It's a smooth, cloudy sake. The brewer recommends drinking it cold or at room temperature, but I had it warmed up and ate some dried mackerel mirin, and it was delicious. Both the sake and the mackerel.
The first Yamagata sake I've ever had. It is a hybrid of Ginjo and Junmai. Ginjo on the nose and Junmai on the palate. The apple aroma goes well with the kneaded cheese. It's delicious.
This Junmai-shu is sold only in 300ml and has a very light taste with an alc. of 13 degrees. It is the biggest sake brewery in Mie prefecture. I think it is a valuable sake made with modern facilities at a reasonable price.
This is not a fancy Junmai Daiginjo, but a very well balanced type.
