Cold sake
Dry and slightly mellow. The slight acidity and carbonation give it a crispness, while the lingering umami taste gives it a rich flavor. The fresh ginjo aroma is present from the moment the bottle is opened, which makes the sake go down a treat 😆.
I got the impression that it was similar to Niigata sake, which is famous for its dry, light flavor.
However, it has a slightly stronger flavor than Niigata sake, but it is elegant without any cloying taste, so it would go better with boiled wild vegetables than seafood.
(It would be happy with rice, thick miso soup with nameko mushrooms, and boiled wild vegetables.)
Cold sake is the best way to drink it! This time, I bought it at a certain place in Chiba prefecture because I was curious about the special-order product.
