Kinjaku, Flying This is a really precious bottle too, and we are happy to receive it: ☺️ Comment from the brewer This Junmai Daiginjo is made by carefully polishing the finest Yamadanishiki and brewing it with clear spring water from the headwaters of the Nishiki River. After slow fermentation at a low temperature, the sake is hung in a sake bag and only the natural drops are collected. When I drank it myself, it stood out for its clarity and gorgeousness without any cloying flavors, and I could feel the elegant sweetness that is typical of Kinjaku. It was a taste worthy of the name "Hisho" (flight), and suitable for a special occasion 🍶✨.
