We were served Hana-no-Kou 9, a junmai sake brewed by Hana-no-Kou Shuzo using Kumamoto's native yeast No. 9.
Unlike the usual Hana-no-Ko, this sake had a crisp "hardness" and a delicate yet core impression, with a clear aroma typical of No. 9 yeast, and was brewed to the exact specifications for the competition.
It was a rare opportunity to experience such a special sake, so I sipped each cup carefully, savoring every sip. I am very happy to have had the opportunity to experience these precious sakes. ☺️
