This is a one-year junmai ginjo made with local ginbukiyo, which the owner of the sake shop enjoyed so much that he ordered a new bottle.

Taste/Purchased on a business trip to Shiga Prefecture.
When I went there around 6:00 p.m. on a weekday, there was no curtain and I had the feeling that the store was not open, but when I entered with trepidation and asked for "suimasen," the store staff came out and politely helped me buy the sake they recommended.
The sake had a strong sweetness, but was easy to drink with a clean aftertaste. I'd like some acidity, but I like this one a lot!
Sake is fun because even small, unknown breweries have good sake.

It's not written on the label, but it was written as Josen at the store. Reasonably priced, less than 1000 yen including tax. It tastes like a honjozo but with a gentle taste. Almost no sweetness, but not too spicy.
It has a citrusy acidity. It has the same sensation as when you drink traditional sake made from 100 bales of rice.
I wonder if you have to go to the brewery to buy the raw sake.

Mochizuki Sake Brewery in Koka City, Shiga Prefecture is a small-scale brewery.
Their Honjozo raw 3 years old sake and Hi-ire Junmai Genshu are great, but I tried the raw sake!
It has a very sugary sweetness and a grainy richness.
It cuts through quickly and quietly, so the taste is a bit unrefined (a compliment to me personally), but it's comfortable to drink.
The label looks like it was printed on regular paper with an old home printer.
I love this kind of label!
