Shiga Local Sake Festival in Otsu 2023⑥.
Mochizuki Sake Brewery / "Suzukabuto" Koka City, Shiga Prefecture
The concept is "sake that tastes like rice," and rice rice called Nihombare is mainly used (Ginfukiyuki, a rice suitable for sake brewing, is also used for koji rice).
The sake is brewed almost entirely by hand, with as little polishing as possible.
Suzukabuto Special Junmai
As the concept suggests, you can taste the rich and deep rice flavor, but the aftertaste is a bit spicy, which is not my favorite.
Suzukabuto Junmai Ginjo
Another rice flavor, with just a hint of sweetness and a sharp taste.
