It's been a while since we had a class reunion at work and for some reason I decided to be the organizer😅.
I reserved a table at a restaurant I had heard about on Sake-no-Wawa🤗.
I was asked by the participants "I want to eat meat, drink beer 🍺" and "I want non-alcoholic beverage",
Wagyu Hitsumabushi and Beef Tongue Shabu Shabu Shabu course with all-you-can-drink for 6,000 yen.

Nagaragawa Junmai Sake
Polishing ratio 65%, 14-15% alc.
Sake degree +5, Acidity 1.7
Mild and mellow flavor 😋.

Rice used is Hida Homare
So called "Hiyahoroshi".
It seems to be a "prohibited out-of-prefecture shipment" sake for local consumption only,
Only three stores in the Tokyo metropolitan area carry it.
The sense of maturity is not so strong, and the umami spreads slowly.
The sweetness is moderate.
It is fresh and has a crisp and refreshing aftertaste, so it is good as a mealtime sake.

Nagaragawa Junmai Ginjo Nama Genjyo Nama Genjyo Tachiharu Asa Shibori, Komachi Shuzo, Kakamigahara City, Gifu Prefecture, Japan
It has a strong sweetness and is robust and powerful, with a hint of acidity at the end. It is a simple, traditional sake, but not too heavy.
