玄HoppyOn a trip to Nagano, I found a variety of sake at a roadside station. I bought one because it had a pop-up that said something like "sweet with just the right amount of acidity".
😅
No, no, it was sharp and dry, and definitely tangy.
It was a little different from my taste, but I wanted to try it lukewarm or something.
We had it with some goya (bitter melon) that we received and some boiled white goya (bitter melon) from our house. miya0428Today we enjoy a Junmai sake from the Wagyo Shuzo brewery.
The aroma is faintly fragrant, which is unique to the sake brewing process.
The taste is delicious with a sense of lactic acidity. ねむちHankyu Umeda Main Store, 9th Traveling SAKE (6)
Formerly Shokame Shuzo, the company name will be changed to "Wagyo Shuzo K.K." from 2023.
The charismatic Mr. Takayuki Morikawa, the toji who made sake with miso malt, continues to work at the brewery. Previously, he was the toji at "Nakazen Sake Brewery" for 10 years.
The person who responded to my inquiry this time was also Mr. Morikawa, and when I asked him about it, he was his younger brother.
The 59% is often used by the Nagano Sake Brewers Association because they jointly polish rice at the Alps Pulverizing Plant. 59% is said to be because it is a bit of a bargain, like 198 yen.

I went to the brewery but it was too early in the morning to get in and I was wondering about a lot of things so I feel better 😆.
So the 59% made sense 😳👍 ねむちPon-chan, good evening 🌛You are indeed a good person for visiting the brewery 😊Morikawa brother, when I talked to him with the information I had researched beforehand, he talked to me a lot 😊Is he from the industry? He asked me if I was in the industry 🤣. boukenThe 9th Traveling SAKE (2)
Wagyo Shuzo, which changed its name from Shokame Shuzo due to various reasons, and the brother of the master brewer visited us.
The brewer's brother came to the brewery.
We drank
Unfiltered raw sake
Normal sake. It had a grape-like taste. Gattun type.
I think this one is my favorite among all the ones I drank.
Junmai Unfiltered Nama-genshu
This is also a heavy type, but it didn't leave much impression...
Yoshimura Junmai Daiginjo
I thought it was modern among the sake breweries here. I thought so.
I asked about the origin of Yoshimura and was told it was the name of the president of a group company😅.
Daiginjo
It's an expensive sake, but I felt a little uncomfortable with the taste.
Junmai Ginjo
It's gorgeous and sweeter than the other ones I've had, but 🤔.
The flavor was a little strange too.
Junmai sake
I think it was the easiest to drink.
It has nothing to do with this brewery, but when I drank Alps Masamune, I realized once again that I prefer daiginjo with alcohol rather than jun-dai. 荒井 正史I thought it was an unfamiliar brand, but I heard that Laughing Turtle changed the brand name (due to the incident). It is still the same classic, old-fashioned sake with a fermented smell. もはるとNagano Local Sake Series (1)
