This sake is made by a female toji. It was recommended to us at our usual restaurant.

The 8th release of the popular sake "SHISORA" SHISORA R06BY, brewed by the first female Nanbu Toji, is a Junmai Daiginjo Unfiltered Nama-shu made from Iwate Prefecture's top quality sake rice "Yui no Kou" and Giovanni no Chikara.
This is a Junmai Daiginjo-unfiltered unpasteurized sake brewed with Iwate Prefecture's top quality sake rice, "Yunokou," which was developed with "Yamadanishiki" as its target rice, and Iwate Prefecture's sake yeast, "Giovanni no Chikara" (Giovanni no Chikara).
It is carefully brewed to be a superb drop of sake that firmly expresses the starting point of the Nanbu style of sake brewing, which is how to bring out the purest flavor from Iwate's finest ingredients.

I chose "Purple Space" 🍶 for my first drink outside today.
The waitress poured me a glass of it and when I put my nose close to the glass, I could smell the gorgeous aroma ♬.
At this point, I knew it was going to be delicious 😆.
The taste of course did not disappoint, with a rich sweetness followed by a mild acidity that comes together nicely and finishes off the taste ✨.

This brewery is located in Shiwa-machi, Iwate Prefecture.
The rice is polished to 55% "Ginga no Shizuku" grown in Iwate Prefecture.
Sake brewed with Iwate yeast "Giovanni no Chikumi".
It has a soft aroma of rice, a calm flavor of rice, a refreshing acidity, and a clean, lingering taste.

I opened the bottle with a lot of noise and almost blew it out of the bottle! But then I thought: ...... It's hard for a retard to drink this......there is a hint of sweetness, but what remains is bitterness! Heavy! Bitter~~!

The first aroma is very floral, as you would expect from flower yeast 😳It has a gentle aroma that reminds me of the smell of flowers ✨It also has a soft sweetness and sourness that spreads softly in the mouth. It's a very comfortable aroma and a strange taste that makes you want to keep it in your mouth forever. ☺️ The sourness appears at the end and finishes off nicely. This is delicious.
It is good as a mid-dinner drink, but it is also good as an after-dinner drink with desserts such as fruit! As the temperature rises slightly from cold sake, the aroma and sweetness become even more pronounced 🤗.
