I bought this sake at the Aeon Mall on my way back from a recent trip to Matsumoto. I drank it with a sake cup I bought when I went to visit a brewery a long time ago.
The appearance was slightly brownish.
The aroma is of fresh, rich rice aroma, typical of unfiltered, unpasteurized sake.
The taste is fresh and mildly sweet. The aftertaste is clean and not boring, with a moderate acidity and bitterness.
For snacks, we drank this sake in an eel rice bowl topped with boiled eel with a little sauce. I think this sake goes well with dishes with sweet sauce.
Daiginjo-esque daiginjo after a long time.
The ginjo aroma is just right.
Tomato and camembert,
Dried radish, tomatoes, camembert, and kiriboshi-daikon.
It is refreshingly dry in the hot summer.
I like Miyamanishiki because of its elegant and soft taste.
Alps Masamune is a brand of sake from Matsumoto.
It is a historical brewery founded in 1869.
To think that they have been making sake since the time of Mr. Sakamoto and Mr. Saigo.... I wonder what kind of snacks they served in Nagano in the Meiji era.
The acidity is more assertive than the aroma.
The honey-like sweetness and acidity are well balanced, and it is easy to drink. The aftertaste is also smooth.
Anyway, the aroma is fresh, fruity, and sweet, and even people who don't like sake will find the aroma pleasant.
The taste is not alcoholic at all, but has a full sweetness at first, light on the throat and not heavy aftertaste, but with a strong umami flavor.
I think it would go well with cheese and other desserts.
Personally, I give it 5 stars.
It is fruity and has a good acidity.
It tastes rich and has a certain flavor, like unfiltered raw sake, but after drinking it, you will feel refreshed.
It seems to be suitable for any occasion.
The sake bottle is also well-designed.
Since it was a Niigata sake earlier, it feels a little more robust. The acidity, unique to junmai, is just right for the second cup.
I would like to see you serve it with something like leek nuta.
Kametaya Sake Brewery
They say it is "shiro" and "umami".
They say it's like amaou.
Gas that seems to make the lid fly off. Sweet aroma. Caramel and citrus, I guess. You can smell it all the time. Soft in the mouth. Dusty aroma in the back. Faint fizz stimulates the tongue and throat. And then the umami. When you mix the cage, it smells like yogurt.
This is my favorite sweet sake. Very tasty. Maybe the timing of opening the bottle was good.
The sake brewery across the street from Daishinshu. I have the impression that they make a very plain and tasty sake. It's kind of plain. It should sell well.
This brewery holds a monthly event where sake is directly pumped from a tank. This is an impressive brewery that has been holding monthly events, probably due to the Corona disaster. The sake tasting at the kiosk had been suspended for a while, but seems to have resumed. 300 yen.
When the door is opened a little, it gushes out. Repeatedly opening and closing the door to prevent explosion.
The moment I opened the bottle, a very floral aroma wafted through the air, but the top aroma was that of porridge, a truly ricey aroma.
A little sourness from carbonation and bitterness from nigori-derived bitterness, the bitterness prevails, and the rest is richness and umami.
