I went to the store to compare it with Morishima, but they were out of all the Morishima Yogo bottles, so I had no choice but to try this one.
It reminds me of the Morishima I drank in the past, so I feel like I'm drinking a Morishima, but with a more authentic taste. I wonder if older people will like this one. I prefer the Morishima one because I'm young (in my mind)!

It seems to have been renewed from Taikan to Fuji Taikan.

Originally, Taikan Yokoyama was not a big drinker, but he was inspired by his teacher, Tenshin Okakura. He was inspired by his teacher, Okakura Tenshin, and trained to become a drinker. This Junmai Ginjo Sake is a blend of Omachi Junmai Daiginjo and Hitachinishiki.
The aroma is calm and fresh with a hint of fruit. In the mouth, the sake is light and clear, but with a rich flavor that spreads and leaves a sharp, dry taste.
It is a refreshing, slightly dry sake that is easy to pair with any meal. It is said to be a mixture of Omachi and Hitachinishiki. You can feel some of the firmness that is typical of Omachi, but the ginjo feeling is light. It is a good sake.
It is a 1:1 blend of Junmai Daiginjo brewed with 50% Omachi polished rice and Junmai Ginjo brewed with 55% Hitanishiki polished rice.
Although the alcohol content is 15%, it is blended into a pure sake.
