Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Pitchy fresh. Light mouthfeel with a green apple-like flavor. The sweetness is moderate and a little bitter. Not too sweet and easy to drink. If I drink sake, I should also drink wine. Kenzo Estate's aska 2013 is over 30,000 yen. I only had one glass, the rest was sake 😅.

Youth for a Lifetime Sake degree +5 Acidity 1.2 The first saké is the supernatant. The aroma of rice spreads when you drink it, and it has a fresh taste that is typical of new sake. Next is the ogara-mi. The umami flavor is added and the balance is good.
