The 10th Meishu Kikizukai in OSAKA โ‘ข. Yoshikubo Shuzo / "Hyakusai", Mito City, Ibaraki Prefecture This sake was brewed in 1790, the second year of the Kansei Era. It is a sake for longevity, and is sold in limited quantities so that people can enjoy drinking it until they are 100 years old. Limited distribution brand. The Hyakusai brand was created by Katsuo Sasaki, a master brewer at Tohoku Izumi in Yamagata Prefecture, who transferred to Yoshikubo Sake Brewery and was succeeded by Tadayuki Suzuki, the assistant master brewer. Hyakusai Junmai Dry It is crisp, clear, and dry with a hint of sweetness. It is said to be the most popular. Hyakusai Jet-Black A special junmai made with Hitanishiki. It is called Jet-Black because it has no ginjo aroma. The mouthfeel is refreshing, and the lack of aroma is probably due to the complex bitterness and umami. [Salmon Desh. I had seen mackerel sake before, but this was my first salmon. It seems to be the second version, and they said it was a blend. Slightly acidic, sweet and bitter.
