Commentary.
This sake is light, but has a solid core of umami. The crisp acidity in the latter half of the bottle asserts its dry, dry character, making it a summer sake with a clear character.
It is delicious.
Since we have had a series of sake with good mouthfeel, let's go with a super-hot sake. This is a summer sake with a sharp taste of +11.

It's Ibaraki, the name is austere, and you'd expect it to be austere and dry anyway, but it's surprisingly fruity and umami. It is a good choice because of its unexpectedness!
fried small horse mackerel, simmered bamboo shoots and thick fried tofu, vermicelli and spinach with sea chicken...
I have to drink 🤣.
I bought Hyakusai because of its cosiness and naming.
The moment I put it in my mouth, I almost thought it was an old-fashioned sake, though the aroma is rich... but it is delicious with a perfect line and a modern atmosphere. The richness of the flavor was not too strong, and it was a very satisfying bottle of sake with a mouthfeel that is hard to find! Thank you very much for the sake!
