GOZ - Gozu - Nama-zake.
Echigo Den'emon is a microbrewery and a revived brewery, and the brewery's toji, Kohoi Kato, was featured in dancyu's sake feature as a next generation sake. Following Tamakihar and Mishaguchi, the third sake we had was GOZ.
The name of this sake, which is made from Gohyakumangoku rice, comes from the fact that it is made from 50% Gohyakumangoku rice and is 5 parts per 5 kilos, or from Mt.
It has a refreshing top nose with a hint of lime, and a flavor so expansive that it is hard to believe it is Ihyakumangoku, but the characteristic astringency gives it a crispness. The cool sake quality that is said to be there is expressed well.

My wife (user name: Pekho) has been wanting to drink Den-emon for a while and we happened to run into it at a liquor store in Nakameguro (Nakameguro Isego Honten) 😳.

Light, dry sake.
Nice coarse rice aroma when pouring into a glass👍.
Not overly polished and clear with a strong umami, but balanced with the rice's natural miscellaneous flavors that are well held back so that they don't stand out.
Moderate astringency lingers on the tongue for a relatively long time
I finished it with my dinner today.
It was served very cold.
I was able to enjoy it chilled and very cool.

It's a pretty dark nigori. Fresh & fruity, with some greenish nuances.
After green apple, lime and lactic sweetness, what passes through the nose is a mint flavor ☘️
Fine effervescence spreads in the oral cavity, and after some time, a strong astringent taste 😌.
It is not very flashy and gives the impression of a Niigata sake 🌾.

From Echigo Den'emon, a revived brewery that advocates nano-brewery and is brewed by a young master brewer alone, comes this 100 Yumachi Mishaguchi.
The banana-like ginjo aroma, the sweetness and robust flavor of Bizen Omachi, and the astringent expression of the aftertaste are all noteworthy. The bitterness is often regarded as a tangy taste in sake, but when considered with food, especially with meat, this bottle has great potential to open up new horizons.

I wanted to drink this sake, so I looked for it and bought it 💰.
I had heard that Echigo Den'emon had gone out of business due to the Corona disaster, but I heard that a new person had taken over the business and was making new sake 💰.
I had bought a bottle of Echigo Den'emon's sake at the Niigata Sake Festival before the Corona disaster, so I had a personal attachment to this sake...
I immediately opened the bottle 🍶 and it tastes great😊.
I thought it had a refreshing taste when I first opened the bottle, but after a while after opening it, a muscat-like acidity also came out and it was delicious 😋.
Personally, I think I prefer it if I let it sit for a while. 🤔
The label design is also very good with all brands having a modern or stylish label 😊.

Impression
It seems that Mr. Kato has been brewing this sake by himself since 2022.
It is said that the astringency is intentionally added, but it is not unpleasant and has a nice flavor.
Perhaps it is because it is a draft sake, but it has a freshness to it that makes it much tastier than one would expect.

Fruity aroma. When you put it in your mouth, it has a strong flavor. It has a sour taste like lactic acid. The aftertaste is a bit bitter. I drank too much because of the addictive taste.

Tamakihar is literally brewed by a single brewer who took over the business of Echigo Den'emon, which had been a dormant brewery. He puts all his energy into a mere 300 kg of rice. It has a clear, outstanding crispness and a characteristic astringency.
