From Echigo Den'emon, a revived brewery that advocates nano-brewery and is brewed by a young master brewer alone, comes this 100 Yumachi Mishaguchi.
The banana-like ginjo aroma, the sweetness and robust flavor of Bizen Omachi, and the astringent expression of the aftertaste are all noteworthy. I wanted to drink this sake, so I looked for it and bought it 💰.
I had heard that Echigo Den'emon had gone out of business due to the Corona disaster, but I heard that a new person had taken over the business and was making new sake 💰.
I had bought a bottle of Echigo Den'emon's sake at the Niigata Sake Festival before the Corona disaster, so I had a personal attachment to this sake...
I immediately opened the bottle 🍶 and it tastes great😊.
I thought it had a refreshing taste when I first opened the bottle, but after a while after opening it, a muscat-like acidity also came out and it was delicious 😋.
Personally, I think I prefer it if I let it sit for a while. 🤔
The label design is also very good with all brands having a modern or stylish label 😊.

Impression
It seems that Mr. Kato has been brewing this sake by himself since 2022.
It is said that the astringency is intentionally added, but it is not unpleasant and has a nice flavor.
Perhaps it is because it is a draft sake, but it has a freshness to it that makes it much tastier than one would expect.

I bought it because of the label and name.
Fruity aroma. When you put it in your mouth, it has a strong flavor. It has a sour taste like lactic acid. The aftertaste is a bit bitter. I drank too much because of the addictive taste.

Tamakihar is literally brewed by a single brewer who took over the business of Echigo Den'emon, which had been a dormant brewery. He puts all his energy into a mere 300 kg of rice. It has a clear, outstanding crispness and a characteristic astringency. When I tried it, I didn't feel the fruity taste that was associated with "I want to drink it with a wine glass", but rather the sake itself.
It might be better to chill the glass well.

This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen...
It's a rich, umami type that's different from the general image of Niigata's sake. It has a sweetness from the rice. As it has won a gold medal, I'm sure this sake would be delicious warmed. It also has a creamy sweetness.

It is gorgeous and fruity like Junmai Ginjo.
I heard that the demand for sake decreased due to the closure of restaurants due to Corona, and the brewery closed this spring because they couldn't expect to make a profit in the future.
