The aroma is sweet like caramel and also like blue cheese! When you drink it, you can taste the sweetness, then the bitterness and umami! The bitter and umami flavors come through! The aftertaste is heavy, but it's not heavy at all. I thought it would be heavier when heated, but it's not! This is a sake that overturns the concept of hot sake as well 🍶.
