A prototype bottle. We were attracted by the impressive temporary label. The nose and mouthfeel are full of alcohol. It has a melon-like fruitiness in the mouth, but it finishes crisp and clean. It is a dry sake that lives up to its label.
As a food sake, it is dry with a modest assertion.
It goes well with sashimi and salads.
Rice: Miyamanishiki
Rice polishing ratio 55
Yeast: Yamagata yeast
Sake degree +10
Acidity 1.5
Alcohol 16.0%.

Shopping in Ginza on the way home from work. I went to Yurakucho in the cold wind. Wanting to relax a bit before boarding the train, I enter a izakaya in front of the station. This is my first time at Fudokui. It's from Yamagata. It has a soft, slightly sweet ginjo aroma. It is crisp and tasty.
The bubbles that come out of the bottle when opened are intense. It stops just before it overflows from the bottle. The aroma has a hint of koji sweetness. The taste is quite dry, with little acidity but a touch of astringency. The sugar content is 9.3%. It is said to have a freshness, but I personally do not find it so fresh, and it is too neat and dry to be very tasty.
When it is filled, it has a soft acidity and umami.
It is fresh, fresh, and Japanese pear-like, including bitterness and pungency.
The acidity matches well with the fat of tuna.
